Receta berenjenas al horno con jamón y huevo
Las berenjenas al horno con jamón y huevo o berenjenas asadas son muy fáciles de preparar y en pocos minutos tendréis una estupenda comida. Adoro este tipo de platos que te sirven lo mismo para un aperitivo, una cena, de entrante o comida con amigos. A su vez, la berenjena es baja en calorías, unas 21 por cada 100 gramos, rica en fibra, diurética y digestiva. Además de ser una fuente de vitaminas (B1, B6 y C) y minerales (azufre, cinc, hierro y potasio).

Ingredientes:
| 1 berenjena |
| 3 huevos, 2 para batirlos y 1 para freírlo |
| aceite de oliva virgen extra |
| sal |
| jamón ibérico |
| pimienta negra |
| orégano |
| queso manchego |
Cómo hacer berenjenas al horno con jamón y huevo
| 1. Comenzamos nuestra receta de berenjenas al horno con jamón y huevo batiendo un par de huevos. Reservamos. |
| 2. Lavamos la berenjena y le quitamos la parte anterior verde. Seguidamente la partimos por la mitad y hacemos bastones medianos. |
| 3. Los bastones de berenjena deben quedar como las patatas fritas en cuanto al largo y un poquito más gruesos. |
| 4. Precalentamos el horno a 180º, salpimentamos las berenjenas, aderezamos con un poco de orégano y las agregamos al huevo. |
| 5. Removemos muy bien para que se impregnen todas las berenjenas con el huevo. Rallamos queso por encima. |
| 6. El queso puede ser el que más os guste. Yo usé queso manchego. Removemos y que se unifiquen todos los ingredientes. |
| 7. Ponemos papel de horno en una bandeja apta y comenzamos a colocar las berenjenas separadas. |
| 8. Llevamos la bandeja al horno, la colocamos a altura media y cocinamos las berenjenas a 180º, calor arriba y abajo. |
| 9. Las berenjenas al horno estarán hechas en unos 20 o 22 minutos, aproximadamente. Aunque el tiempo va a depender del grosor. |
| 10. Es el momento de freír el huevo casi sin aceite. Para ello vamos a colocar una sartén antiadherente al fuego. |
| 11. Agregamos unas gotitas de aceite de oliva virgen extra, con unas gotitas será suficiente o una cucharada sopera. |
| 12. Con el aceite casi en frío añadimos el huevo y lo cocinamos a temperatura media baja, 5 sobre nueve que tiene mi placa de inducción. |
| 13. Salamos la yema al gusto y dejamos que el huevo se cocine a nuestro gusto, más o menos. A mí me encanta poco hecho. |
| 14. Emplatamos colocando las berenjenas en la base, el huevo encima, unas buenas lonchas de jamón ibérico y, si queréis, un poco más de queso rallado. |
| 15. Llevamos a la mesa nuestras berenjenas al horno con huevo y jamón acompañadas de una buena barra de pan. ¡Y a disfrutar, amigos! |
